In the 1920’s Harry Cradock created & published the ‘marmalade cocktail’ its transformation over the years has inspired me along with the Architecture in London. The ‘Shard’ being a perfect example of this continuou improvement

METHOD

Build, Stir & Double strain

INGREDIENTS
  • 2 Bar Spoons Seville Orange Marmalade
  • 12.5ml Bacon-Fat Washed Beefeater Gin
  • 50ml Clarified Orange Juice
  • 10ml Lime Juice
  • 12.5ml Caperitif Sweet Fynbos Vermouth
GLASSWARE
  • Classic Stemmed Crystal Wine
GARNISH
  • Dehydrated Cured Speck Ham Crisp
  • Toast with Butter, Marmalade & Caramelized Orange Rind
ICE
  • Hand Cut Cubes
